The blush-hued Caroline’s showcases a stylish Caribbean aesthetic, with tropical leaf wallpaper and gold accents. The restaurant boasts floor-to-ceiling windows, revealing a dreamy postcard view of historic Christiansted and the oceanfront that wraps around it. Caroline’s is known for its classic breakfast and brunch dishes, like crepes and eggs Benedict, along with fruity mimosas.

Situated under a shady veranda outfitted with rattan furniture, The Mermaid offers breezy vistas of sea ripples and swaying palm trees. There’s also beach seating, with front-row views of the Monday night fire dancer show. The lunch menu features burgers, tacos and grouper sandwiches, while the dinner menu includes entrees like Creole chicken and the day’s local catch.

Barefoot chic is the dress code at Eat With Fred, where guests dine under cinnamon-striped umbrellas and strung twinkling lights that overlook the ocean. Situated on the western shore of St. Croix, Eat With Fred boasts legendary sunset views, as well as seasonal island flavors. Popular dishes include ceviche and whole snapper.

Tucked into Christmas Cove — a protected bay near the private island of Great Saint James — Pizza Pi VI is a floating pizzeria, accessible only by boat. Located on a private island paradise overlooking Caneel Bay, Lovango is picture perfect, with sugar sand and water fringed by sea grape trees. The four-course menu changes weekly, but options often include king salmon and osso buco.
